Happy Tuesday! 🙂 I really wanted to post this on April fools day yet I found myself falling asleep at 8 pm (it was a long Monday) I hope you all had a fab weekend, time for my last week in work before the Easter holidays!
It was such a busy last week AGAIN. So last Friday was the day that all our teaching staff from the pre-school came together at lunch time and have a little lunch together (because us teachers need a little break from time to time!). After last weeks busy antics it was a well deserved lunch date.
It was such a beautiful and very HOT day on Friday as usual here in sunny Singapore. With it being so hot lately I like to bake something refreshing and light. So I thought since some of our staff are from England and we always talk about the goodies we miss from home, I brought a little bit of England to Singapore. I decided to bake a lemon drizzle tray bake, yes by the woman herself Mary Berry… Who else? It went down super well on the hot day and therewas non left for my little old boyfriend, as you can imagine I was in trouble with him! But it was really worth it. Some of the teachers said it could even beat Mr Kipling himself (the brand in the uk who makes the lemon slices sold in our supermarkets). The cake was so light and citrus like. It was a very simple bake as well as it’s similar to the lemon drizzle cake my mum makes. Here is the recipe from Mary Berry’s baking bible book. I think it was perfect for a picnic as it’s something easily and quick to bring and bake!
I had a lot more baking to be done that weekend. As all of my fellow British people know last Sunday was the UK Mothers Day. I was a very good daughter and prepared a lovely lemon cheesecake for my mum as it’s her ultimate favourite. This time however I did not use Mary Berry’s recipe, but a trusted special recipe of my mothers and I. Surprisingly she didn’t notice it was missing! However I dropped the big request on her on Mother’s Day that we have 2 big birthday cakes to make this month, so I don’t know if I was an amazing daughter this year. I have already posted about my boyfriends big peanut butter overload cake. However my best friends 18th is on the 9th of April and she has requested my mother and I to make the ultimate red velvet cake. She has requested that is almost identical to my 18th birthday cake. Since my birthday cake costed a bomb to make over here in Singapore my mother has volunteered to pay for it all thank the LORD. As you can imagine… It’s a busy baking month for moi! Fingers crossed no baking disasters happen. 👍
