I was super excited for this weekend because it had been yet again been a loooong week. Whenever I post I always seem to say that it’s been a busy week, but last week really has been busy. I’ve been sick with a sinus infection for the end of my weekend and beginning of of the week (not fun at all!). However I am all better now and ready in baking action.
I’d been so excited for last Friday because my friends and I have decided to come together and have a big dinner. I can finally show off a little with my baking skills! My best friend and I always get a little competitive with our baking. Last Friday I decided to bake something chocolatey, so I chose to bake a Mary Berry special just to be sure I’m safe! I thought since it was a Friday you need a special treat… So why not have a little chocolate-gasm? So I’ve decided on Mary Berry’s chocolate cupcakes from her lovely baking bible from the baking heavens. As usual her recipe confused my mother and I but nevertheless I stuck with it!
The recipe starts with making a thick chocolate paste with coco powder and 4 tablespoons (or more) of boiling water. It was very odd at first however once adding all the remaining ingredients it looked and smelt amazing. I gave it a little taste test as you always should do with your cake mix! (Not really but hey! Why not? My rules are different) it tasted heavenly. So then the next step was placing them in the oven. My mum and I have always loved baking cupcakes and they always turn out nicely shaped. Yet with Mary Berry’s they were all uniform and exact. I was so shocked when I took a little peak through the oven door. I started to dance like a little girl… Who knew cupcakes would do that? Once they were all baked and cooled I of course had to do the all importing tasting… I can never resist! 3 cupcakes later I decided they were too good to be true, had to pinch myself a little.
What’s a cupcake without its thick creamy frosting? Well unfortunately I would post the recipe for the frosting but it’s my mums chocolate special. Hopefully soon she’ll let me share it! Yet for now you’ll just have to look and drool. What I can tell you about this frosting is it’s definitely not a low calorie recipe!
I served these up to all my friends and they said I should open a cupcake store, I think that was a good enough response! No only that, there was a culinary chef at the dinner party and he did tell me they were amazing! So well done Sam and mamma jones.
