I know this sounds strange… Healthy cookies? As if they will taste any good! Well these have been tried and TASTED by my Cookie Monster of a boyfriend and been approved! Yummy snacks that actually aren’t bad for you. So here it is my own recipe for healthy oatmeal, honey and raisin cookies 🙂
1cup and 1/2 of rolled oats
1/2 cup of oat flour (rolled oats blended together till flour texture)
1/4 teaspoon baking soda
1/2 teaspoon of vanilla essence
1 teaspoon of cinnamon
3/4 cup of raisins
1/2 cup of honey
1 tablespoon of olive oil or canola oil (your preference)
1 – Preheat your oven for 175 C and grease a medium tray with a small knob of butter or grease proof paper.
2 – In a small bowl mix together the honey, egg, oil and vanilla essence and ground cinnamon until all combined.
3 – In a blender place your 1/2 cup of rolled oats and blend together until flour texture appears.
4 – Combine oat flour, rolled oats, baking soda and raisins with a mixer then pour in the combined wet ingredients from step 2 with the dry ingredients. Mix until all mixture is fully combined.
5 – With a teaspoon full of cookie mixture place onto baking tray. The mixture should produce around 10 small portioned cookies.
6 – Bake in the oven for around 10 -15 minutes until golden brown. Yet if you would like a soft & oozey cookies (like myself) only bake for around 10 minutes.
7 – Then for the easy part… EAT!
